#FriFotos: It’s Not Easy…

This week’s #FriFotos * theme is GREEN. Kermit the Frog often bemoaned his coloration, saying it “blends in with so many ordinary things.” That’s certainly not the case in Ireland, where the very nearly day-glo hue of the hills is so bright you gotta wear shades.

The crew at Intelligent Travel wants to wish everyone a safe and happy St. Patrick’s Day tomorrow. To get you in the spirit, we thought we’d share a recipe for corned beef and cabbage, a traditional North American St. Patty’s Day meal, from one of our favorite grandmothers, Patricia Fox of Regina, Saskatchewan.

Ingredients:
2-4 lbs. corned beef brisket
6 medium potatoes
1 small cabbage (cut in quarters)
6 medium carrots (optional)
1 yellow turnip (optional)

Directions:
Put the beef in a pot and cover it with cold water. Bring to a boil, then lower heat and simmer gently for 2 hours. Skim the fat from the brisket, add vegetables, and simmer for another hour. Serves 4-6.
